Kumro r chakka (Potato and Butternut squash dry medley)
Kumro r chakka or the butternut squash and potato curry is a dry dish which can be eaten both with rice or luchi, roti and parota... I love this dish since I was a child as it was more of a sweet veg dish. Sweet tasting dishes are my weakness.
The normal pumpkin or kumro is much more sweet than butternut squash, hence I add sugar to make it taste similar. This is a week day lunch menu for me. I combine this with masoor daal to eat the rice.
The recipe for this quick preparation is -
Butternut Squash - half of the squash cubed
Potato - 2 medium size cubed
Ginger Paste -1 1/2 tbsp
Sugar - 2 tbsp
Salt
Turmeric powder
Chilli Powder
Bhaja Masala - dry roasted and grind the paanch phoron
Paanch Phoron - 1 tsp
Dry Red Chilli - 1 or 2
Shahi Garam masala - 1/2 tsp
Oil
The preparation -
Temper the oil with paanch phoron , dry red chilli , turmeric powder and sugar.
After the spices start to splutter add the potato and fry them for a couple of minutes in medium-high heat.
When the potatoes are sligtly browned add the squash cubes.
Fry the squash and potatoes together. During this time add the salt and the ginger paste.
Mix and fry them together. Cover the pan and let it fry in medium heat for a couple of minutes.
Now is the time to add the dry spices of bhaja masala and chilli powder. Add little water to make the veggies a little mushy.
When all the vegetables are cooked before taking out in a bowl for serving just add the shahi garam masala and mix it. This will give the dish a nice aroma. Serve it with rice or roti.
